Proper "Low and Slow" BBQ Lands in Dundalk

Great Northern Larder is a BBQ sauce and spice rub manufacturer in Dundalk, and the Spotted Dog is a restaurant on the Long Walk in the town. The two companies have worked together in the past, but they are now taking it to a new level with a full "low and slow" BBQ collaboration every weekend starting on the 22nd January 2021.

Brendan Mulligan is the head chef in The Spotted Dog and he has been working hard mastering BBQ classics such as Texas brisket with Great Northern Larder "Steak" seasoning, pit beans, corn salsa, and winter slaw. Brendan has also developed a Caribbean pulled pork using Great Northern Larder's new "Rum" BBQ sauce and their classic "Jerk" seasoning. The most innovative offering is spiced "Plum" pork ribs with "Rib Rub". Finishing off the sides are pickled red onions, nachos, a couple of floury baps, and 2 portions of The Spotted Dog's beloved handcut chips - a legend in Dundalk at this stage.

Ruairi and Laura from Great Northern Larder have been obsessive about BBQ for years now. They have eaten in BBQ restaurants all over the world and almost every day the postman drops a sample of sauce from Texas, Argentina, Germany, or some other meat loving country onto their doorstep. Ruairi spends most of January huddled over his trusty rusty barrel BBQ when everyone else has the sense to be indoors. Great Northern Larder as a company now exports its sauces and rubs to BBQ pit masters across Europe and even to the USA.

Brendan in the Spotted Dog did his training with Michelin starred Derry Clarke in L'Ecrivan in Dublin before becoming head chef for Kevin Arundle of Chophouse fame. Along with his brother Vincent and their families Brendan opened The Spotted Dog in December 2017. The restaurant is a very relaxed bistro style experience that serves amazing breakfasts and the best of local produce right through until dinner time. All the meat including the BBQ cuts come from Dundalk pork butchers P.A. Quinn and beef butchers Coyle Meats.
