Inspired by the menu at Aaron Franklin's famous BBQ joint we are hosting a pop-up eat and learn event at our HQ. When you arrive, you will be actively helping to cook peppery beef sausages made for us by our local butcher using brisket trimmings and GNL steak rub.
After starters we will remove a slow cooked brisket from our UDS - Ugly Drum Smoker and prepare sliced and pulled beef. We will also cook a side dish of baked potato in our cast iron potato bakers over an open fire. These two dishes will be served with fresh sourdough bread and home-made salads.
For dessert our resident baker, Laura, will have prepared a classic Texan Pecan Pie. Made with lots of healthy ingredients a Pecan Pie somehow ends up being one of the most fattening and delicious pies ever invented. We love it!
We will serve a complimentary Barbacoa Rum or Low 'n' Sloe Gin for the non-drivers, and you are welcome to BYOB. There will be loads of soft drinks available. Everyone will take home recipes and instructions for all the dishes.

Learning
During this event you will learn how to cook sausages over a low heat by controlling the temperature of a Weber kettle. We will also talk about brisket and if we can get it, we will cook both grain fed and grass fed to taste the difference. Baked potatoes will be cooked over an open fire where fire management will be critical. There will be plenty of food and nobody will leave hungry.
Venue
We have ample parking at the venue. All food and equipment is provided. There will be basic toilet facilities. The venue is partially outdoors (with shelter available) so please bring a rain coat. The venue is accessible, but you may need some assistance with a low step. Children are welcome, but please be aware that we are on a very busy main road and constant supervision is required. Children do not need as ticket if you are happy to share with them.
Dietary
Please note we cannot cater for allergens, dietary requirements, or special requests. Most of the main courses in this series are gluten free and if you let us know we will try and cater for gluten free. The home made cakes are not possible to make with GF flour. This event is not suitable for vegans or vegetarians!
Food Safety
You will not be handling raw meat. You will be provided with hand-washing facilities. You will be partly preparing your own food and this is a learning event rather than a catering event. We are approved by the HSE to make cakes and prepare sauces in our kitchen and we have HACCP training. All other meal prep will be hands on and part of the learning event.
